Georgia has handcrafted this beautiful Christmas recipe to not only be delicious but to be a healthy alternative to the processed, refined and prepackaged Christmas treats. This recipe is made from wholefoods and packed with nutrients. Easy to make, can be made in advance and stored in the fridge or freezer for up to a month – perfect for getting organised!
MAKES 12 | GLUTEN FREE | DAIRY FREE | NUT FREE | VEGAN
1/3 cup organic cacao powder
1/3 cup pure maple syrup
1/3 cup virgin coconut oil, melted
1 teaspoon pure vanilla extract
2 cups puffed quinoa
1 cup organic desiccated coconut
1/2 cup organic dried fruit of your choice (goji, raisins or cranberries)
1/2 cup seeds of your choice (pepitas, sunflower, chia)
Pinch natural salt flakes
In a large bowl, whisk together cacao, maple syrup, coconut oil and vanilla until smooth. Add remaining ingredients and fold together until evenly coated in cacao mixture. Fill a silicone cupcake mould or muffin tray lined with patty pans, pressing mixture down firmly using the back of a spoon. Refrigerate until set. Remove from moulds and enjoy. Can be stored in the refrigerator or freezer.
