Lemon Myrtle Balls

Lemon Myrtle Balls
Try this tasty snack that will not only satiate your appetite but is also high in vitamin E, magnesium, zinc and antioxidants! Super easy to make and will store in the fridge or freezer!

Ingredients

3 cups of desiccated coconut
2 cups of cashews
1 cup of almonds
1 cup pitted medjool dates
2 pinches of salt
Zest and juice of 3 lemons
10 lemon myrtle leaves (chopped fine)
1/4 cup of maple syrup
1 cup of toasted coconut (to roll balls in).

Method

Place the coconut, cashews, almonds, dates and salt in a food processor and process until the oils release. (You will have to stop and scrape down the sides of the processor multiple times). Process until the mix is sticky to touch. Remove to a mixing bowl and add the remaining ingredients. Mix well before rolling into small balls and tossing in the toasted coconut.

Makes approx 40 balls.
