Mango Chia Pudding with Pineapple and Mint

There’s no better way to start your morning than with our vibrant, refreshing and nourishing Mango Chia Pudding with Pineapple and Mint. 

As simple as it is delicious, this recipe is incredibly rich in nutrients to enrich and support your mind and body for the day ahead. The star ingredient, chia seeds are brimming with minerals, antioxidants, fibre and omega-3 fatty acids that may lead to a multitude of health benefits, such as:

  • Promoting heart health
  • Strengthening bone health
  • Reducing blood sugar levels

Chia seeds are also known for their weight management benefits. They are extremely potent in soluble fibre, as they absorb water and expand in your stomach. This helps slow digestion and regulate your appetite, increasing feelings of satiety after eating.

Naturally sweetened with maple syrup, vanilla extract and fresh fruit, this is the perfect breakfast to complement your summer morning routine.

Experiment by adding some of your favourite seasonal fruits to this recipe for a variety of flavours to keep it as a staple breakfast option all year round!

Serves 4

Gluten-free | Dairy-free | Egg-free | Grain-free | Nut-free


• 1/3 cup / Chia seeds

• 400 ml / Coconut milk

• 3-5 tablespoons / Pure maple syrup

• 1 tablespoon / Pure vanilla extract

• 3 large / Mangoes, peeled and diced

• 1 tablespoon / Lime juice

• 1/4 / Pineapple, peeled and diced

• 1 tablespoon / Mint leaves 

• Freeze-dried pineapple, optional


1. Mix chia seeds, coconut milk, maple syrup and vanilla in a mixing jug. Pour into 4 serving glasses or jars. Place in refrigerator to set for 15-20 minutes.

2. Meanwhile, purée 2 of the mangoes with the lime juice in a food processor until smooth. Evenly pour over chia mixture.

3. To serve, mix remaining mango, pineapple and mint. Place a generous spoonful of pineapple mixture on top of the purée. Serve chilled.
